From brewery waste to baked goods

Spent grain is the largest byproduct of the brewing industry – Danish breweries alone generate 117,000 tons per year. However, spent grain holds great potential for use in baked goods, as it adds fiber, protein – and a lot of great taste.

That’s why we have partnered with Flying Couch Brewery and Fovl Bakery to explore how fresh spent grain can be given new life in bread production. In this project, we focus on developing effective processes for collecting and handling the grains, and we collaborate with our partners to identify types of spent grain that are suitable for baking.

The project is part of Closing Loops, co-financed by the EU and the Danish Board of Business Development.

Upcycling Juice waste streams

Juice pulp - the dry matter that remains after pressing juice - is a major sidestream with many potential applications in food. Together with Tempty Foods, we are exploring how carrot pulp can be upcycled into alternative meat products based on mycoprotein.

In the project, we will set up systems for the collection and handling of the juice pulp, while Tempty Foods will test how the pulp can substitute fresh carrot in their products.
